Truffle Butter Steak with Garlic-Parmesan Whipped Potatoes & Roasted Asparagus

🥩 Ingredients
For the Steak:
2 ribeye or filet mignon steaks (room temperature)
1 tbsp olive oil
Salt & fresh cracked pepper
2 tbsp unsalted butter
2 cloves garlic, smashed
1 sprig fresh rosemary or thyme
For the Truffle Butter:
4 tbsp softened butter
½ tsp truffle oil (black or white, whichever you prefer)
Pinch of flaky sea salt
For the Whipped Potatoes:
3 large Yukon Gold potatoes, peeled & cubed
3 tbsp butter
¼ cup heavy cream (warm)
¼ cup grated Parmesan cheese
2 cloves roasted garlic (or 1 tsp garlic paste)
Salt to taste
For the Asparagus:
1 bunch fresh asparagus, trimmed
1 tbsp olive oil
Salt, pepper, and lemon zest
🍳 Instructions
1. Make the Truffle Butter
Mash softened butter with truffle oil and sea salt. Chill in the fridge while you cook everything else.
2. Cook the Potatoes
Boil until tender (about 15 minutes). Drain and mash or whip with butter, warm cream, Parmesan, roasted garlic, and salt until silky smooth.
(Tip: use a hand mixer to make them cloud-like.)
3. Roast the Asparagus
Toss in olive oil, salt, pepper, and lemon zest. Roast at 425°F for 10–12 minutes until tender and slightly charred.
4. Cook the Steak
Heat olive oil in a cast-iron skillet on high until shimmering.Season steak generously with salt & pepper. Sear 2–3 min per side for medium rare (adjust to your preference). Add butter, garlic, and herbs. Spoon the melted butter over the steak (“baste it”) for 1–2 minutes. Let rest 5–7 minutes before slicing.
5. Assemble Like a Pro
Spoon a swirl of whipped potatoes onto a plate. Fan out your steak slices next to it. Top the steak with a slice of truffle butter so it melts over the top. Add roasted asparagus on the side. Finish with a sprinkle of flaky salt or a drizzle of balsamic glaze if you’re feeling extra.
